As the cooler months roll in we want to warm our bodies with delicious healthy foods. As well as feeling as though you’re warming from the inside out, soup is also a great way to sneak a whole lot of veggies and beneficial herbs into your everyday diet. You can tailor it to suit your needs and wants; whether you want an anti-inflammatory soup or a flu kicking soup, it’s up to you, have a search on Google to find the best vegetables for your needs. Add noodles or some protein (meat/beans/lentils/tofu) to make it extra filling and have some fun experimenting.
Below is a fail proof starter recipe to get you started:
- 2 cups – water/chicken stock/vegetables stock (I love bone broth but it is expensive)
- 1 carrot chopped
- 1 zucchini chopped
- ½ bokchoy chopped Large handful of spinach (or green alternative)
- Small handful of chopped spring onion (just use the green tips for low FODMAP)
- Parsley (to taste) 1 tsp of olive oil
Bring 800ml of water to the boil: add stock and parsley If you want the soup smooth then you can either blend the vegetables with olive oil before you add it to the stock or you can blend after they are cooked and softened. Add the vegetables to the stock and simmer for ten minutes. Let cool and serve warm
